Once upon a time, Seattle suffered from a serious dearth of good bagels. We can safely say that that time is no more: With newcomers like Loxsmith, Muriel's All Day Eats, and the recently opened Oxbow throwing their hats into the proverbial (boiled dough) ring, the city is now home to a burgeoning bagel scene that some even say rivals that of New York City. Bagel Oasis Add to a List
This old-school Ravenna cafe has been slinging handmade bagels since 1988. Former Stranger staff writer Nathalie Graham wrote in 2019, "When it comes to bagels, it's all about the schmear, and none I've tried comes close to the richness and the variety of flavor in the Ravenna bagel shop's feta and dill spread. Its smell alone makes you salivate. And it's not false advertising."

Blazing Bagels
If you prioritize variety in your bagel-eating experience, look no further than this local chain, which produces a whopping 35 different bagel flavors ranging the gamut from snickerdoodle to pepperoni pizza. The business also offers 14 different cream cheese flavors as well as homemade breads, rolls, bagel dogs, and sandwiches.

Eltana
For a change of pace, try this shop specializing in wood-fired, Montreal-style bagels. Camp out with a cup of hot coffee or tea and try your hand at solving the giant crossword puzzle on the wall, which changes weekly. Hot tip: You can get a free extra bagel with your purchase of a bagel and schmear on Tuesdays.

Howdy Bagel Add to a List
This queer-owned business immediately announces its playful ethos with a cheeky cowboy pinup logo, but its hand-rolled, small-batch bagels are no joke, with a perfectly chewy texture and crisp exterior. Husbands Jake Carter and Daniel Blagovich, who started baking at the beginning of the pandemic, don't skimp on toppings either, with irresistible combos like the "Brokeback Mountain Goat" (scallion schmear, tomato jam, and herbed goat cheese) and the "AB & J" (crunchy almond butter and Maury Island jam). Look for a brick-and-mortar shop opening in Tacoma later this fall; in the meantime, you can catch them at the Proctor Farmers Market or sign up for the waitlist for their Bagel Club subscription.

Loxsmith Bagels Add to a List
Former sushi chef Matthew Segal's baking operation currently runs the pop-up "Bagel Bodega" inside the Georgetown deli Harried & Hungry Add to a List . The seafood-centric menu takes inspiration from classic New York breakfast sandwich joints, with topping options such as nova lox, sturgeon, black cod, and "salmon candy." Segal plans to open a brick-and-mortar cafe on Beacon Hill.

Macrina Bakery
The newly opened spots may get all the buzz, but don't discount the dependable local chain Macrina, which is also baking up some highly respectable bagels. The bakery's "MadRy Organic Sourdough Bagels," named for the company president Scott France's kids Madison and Ryan, are made with Skagit Valley Malting barley malt powder and Fairhaven Mill rye and leavened with both sourdough starter and commercial yeast for a tangy, gorgeously blistered result.

Old Salt Add to a List
In December 2020, the Fremont restaurant Manolin Add to a List opened this fish and bagel concept by James Beard-nominated chef Elizabeth Kenyon, who works as the executive chef of Manolin and Rupee Bar Add to a List . Choose from sandwiches like smoked cod (smoked black cod, cucumber, tobiko roe, and whipped cream cheese on a sesame bagel), kippered salmon (hot smoked Olympic Peninsula keta salmon, pickled onions, capers, and herb cream cheese on a poppyseed bagel), and veggie (roasted eggplant, red pepper, pickled carrots, sprouts, and chili cream cheese on a black sesame Aleppo pepper bagel). High-quality fish is also available by the pound.

Oxbow Add to a List
Brothers Jesse and Kit Schumann, the owners of the acclaimed Sea Wolf Bakers Add to a List , recently opened this highly anticipated cafe spinoff next to Cafe Lago Add to a List in Montlake, with bagels, coffee, quiche, spreads, and "other humble offerings." J. Kenji López-Alt has already granted the bagels his coveted seal of approval and wrote that "it all looks super promising."

Rachel's Bagels & Burritos Add to a List
This Ballard spot owned by married couple Paul Osher and Raquel Zamora specializes in—you guessed it—scratch-made bagels and breakfast burritos. Staple flavors include everything, za'atar, poppyseed, sesame, togarashi, and plain, with rotating flavors like oil-cured black olive, Stoup Brewing Add to a List spent grain, and cherry poppyseed. Try one of the many excellent bagel sandwiches, like the "Nino Art" (Pacific Northwest sockeye lox, scallion cream cheese, pickled jalapeño, avocado, cilantro, and onion).

Rubinstein Bagels
Set on perfecting his sourdough bagel recipe, artist Andrew Rubinstein launched this business in 2019. Since then, it's spawned brick-and-mortar locations in South Lake Union and Capitol Hill and won a loyal following. J. Kenji LĂłpez-Alt has praised Rubinstein's offerings for their "real proper chew and great blistered crust." The shops offer flavors ranging from salted rosemary to cacio e pepe, as well as a variety of shmears, toppings, sandwiches, and drinks.

Westman's Bagel & Coffee Add to a List
At this sidewalk cafe from Monica Dimas of Little Neon Taco Add to a List , a smattering of schmears, including plain, scallion, smoked lox, and dill and black pepper, can be slathered onto your choice of nine New York-style bagels: Maldon salt (swoon), everything, pumpernickel, plain, sesame, cinnamon and currant, pumpernickel everything, jalapeño cheddar, and a rotating special flavor. Feel like treating yourself? Upgrade with a luxe caviar schmear add-on available on Fridays. Besides bagels, there's gloriously glossy challah, rugelach, chocolate babka, tahini brownies, Maldon chocolate chip cookies, and sandwiches, like the B.E.C. (a classic bacon, egg, and cheese breakfast sandwich on a soft roll), an avocado bagel sandwich with pickled red onions and everything seasoning, and a house-smoked whitefish salad sandwich.

Baker Josh Grunig's Jewish deli Zylberschtein's sells New York-style bagels, available slathered with cream cheese, lox cream cheese, or Lebanese spreads from Damoori Kitchen Add to a List . For a satisfying breakfast, try the Frankel, a bagel breakfast sandwich loaded with house-smoked pastrami, two eggs, Tillamook cheddar, and mayo (a vegetarian version with seasonal veggies in place of pastrami is also available). You can also treat yourself to bagels at Zylberschtein's kosher Jewish bakery spinoff Muriel's All Day Eats Add to a List , tucked inside Seward Park's Third Place Books Add to a List .
