The end of the year is traditionally a time for reflection, so we're taking stock of some of 2021's most exciting additions to Portland's restaurant scene (including Baon Kainan, Bit House Collective, Mitate, and Pizza Thief) and looking forward to some exciting upcoming openings in 2022 (hello, Dough Zone and Kann). BEST OPENINGS OF 2021

Baon Kainan Add to a List
Married couple Ethan and Geri Leung, the team behind the Seattle pop-up Baon Kainan, opened this up-and-coming cart, which was named the best new food cart of 2021 by Eater PDX, at Metalwood Salvage Add to a List this summer. The spot's tagline is "not your tita's cooking," which reflects Ethan and Geri's experiences as Filipino-Americans growing up predominantly in the United States, with a menu that melds traditional Filipino cooking with influences from American fast food and snacks as well as the cuisines of personally significant places like Italy, South Carolina, and Hawaii.

Bit House Collective Add to a List
This cheeky, self-proclaimed "Michelin-starred dive bar" opened in the historic Bit House Saloon Add to a List space in February. Expect a menu of playful cocktails and non-alcoholic drinks from "mixtress" Natasha Mesa, including mangonada cocktails and year-round frozen drinks. Another draw? Unique beers from Pono Brewing, like a hazy pineapple Kolsch and a pink guava strawberry farmhouse ale. Better yet, vegan favorite Miami Nice Add to a List is the current in-house food residency.

Brasa Haya Add to a List
Chef Ian Muntzert, who racked up restaurant industry cred working as the chef de cuisine at the Michelin-starred restaurant Commonwealth in San Francisco, opened this Spanish restaurant in the historic American Foursquare house that was once home to Beech Street Parlor Add to a List in June. The restaurant features Spanish cuisine cooked by live fire with mesquite wood, with dishes like sea urchin bocadillos, crispy tripe, and coal-roasted chicken wings.

Buddy's Steaks Add to a List
A cheesesteak with neither cheese nor steak may sound like a ship of Theseus-type paradox, but it's a reality at Buddy's Steaks. After running some pop-ups for their plant-based Philly cheesesteak concept earlier this year, Eem general manager Angela “Ang” D’Occhio and Buddy Richter (who's worked at Vtopia and The Mocking Bird) opened this cart in the Rose City Food Park at the end of May. Their take on the regional carnivore-staple sandwich is made with textured vegetable protein and vital wheat gluten, with pockets of coconut oil fat and a cashew- and coconut oil-based cheese. Besides cheesesteaks, the cart also offers fries, kale salad, plant-based cheesesteak egg rolls and mozzarella sticks, and a Beyond Meat sausage and pepper sandwich.

Burma Joy Noodle House Add to a List
The team behind Top Burmese opened this "plant-forward" sibling restaurant in the former Picnic Add to a List space in September, serving primarily noodle dishes. The menu features Burmese spring rolls, jade rice (jasmine rice marinated in fermented tea leaves), chickpea salad, garlic noodles, kyay oh noodles (available in soup or salad), Punn Thay noodles (wheat noodles with five-spice, cabbage, and tomatoes), Golden Hill noodles (wheat noodles in chickpea coconut curry sauce), and tea leaf chicken curry.

Cafe Olli Add to a List
This all-day cafe officially opened in the former Ned Ludd Add to a List space earlier this month, with scratch-made baked goods from co-owner and pastry chef Siobhan Speirits, who you may know from her project Saint Frances. The cafe also serves wood-fired pizzas, salads, handmade pasta, sandwiches on house-baked bread, charcuterie, and other wood oven-baked dishes.

Chelo Add to a List
The Mexican pop-up Chelo, run by former Nightingale Add to a List co-owner and chef Luna Contreras and bartender Michelle Ruocco, began its residency at Magna Kusina Add to a List this fall. Chelo focuses on seasonally driven street snacks, pastries, and drinks, made with local ingredients and deriving inspiration from Contreras's grandmother's restaurant in Guadalajara, Jalisco.

Derby Add to a List
The second coming of chef Judith Stokes' restaurant Derby Kenton, which converted into a neighborhood market during the pandemic and then closed last November, reopened in a new 2,500-square-foot location over the summer, serving brunch dishes like challah French toast, macadamia nut waffles, and breakfast burritos, as well as the restaurant's cult-favorite smash burger. Bar manager Solana Robinson provides sassy cocktails like the "Fancy Betch" (gin, elderflower liqueur, bright shiso leaf, and salted plum) or "Ma Moi" (a banana coconut cream slushy).

Everybody Eats Pearl District Add to a List
Everybody Eats, which started as a catering business in 2016 and previously operated out of the Oriental Food Value supermarket, moved into its own full-fledged brick-and-mortar in the Pearl District in March. The spot features comfort food like peach cobbler chicken and waffles as well as crab-lobster-shrimp mac and cheese, plus indoor and outdoor seating and a full bar.

Feel Good Add to a List
In August, local chef and Top Chef: Portland contestant Gabriel Pascuzzi (of Mama Bird Add to a List and the recently closed Stacked Sandwich Shop Add to a List ) opened the brick-and-mortar incarnation of Feel Good, the popular grain bowl pop-up he launched in May 2020. Guests can choose from four different bases (cauliflower rice, red quinoa, brown rice, and mixed greens) and from various pre-set bowls, such as the "Usual" (basil mint pesto, charred lemon vinaigrette, cucumber, cherry tomato, arugula, marinated chickpeas, red onion, nutritional yeast, sumac, and basil microgreens). You can also boost your bowl with add-ons like Ota tofu, Mary's chicken, and avocado or build a custom bowl from scratch.

Grassa Add to a List , Lardo Add to a List , Tasty Add to a List , Fills Add to a List , Lac St. Jack Add to a List , and Oven and Shaker
Lake Oswego is quickly becoming a dining destination, thanks to the Mercato Grove development. The sought-after sandwich shop Lardo and the fresh pasta spot Grassa opened new outposts there in April, followed by the revival of the well-known brunch staple Tasty and a new location of pastry chef Katherine Benvenuti's buzzy Berliner-style donut shop Fills in June. The popular French restaurant St. Jack also opened a second location called Lac St. Jack in July, and a location of the wood-fired pizzeria Oven and Shaker joined the throng this fall.

Flor Wines Add to a List
Famed Portland sommelier Andy Fortgang, the co-owner and wine director of Le Pigeon Add to a List and Canard Add to a List , opened this highly anticipated wine shop in November, along with business partner Gabriel Rucker and former Little Bird Add to a List wine director Sergio Licea.

Friendship Kitchen Add to a List
This warm, welcoming Vietnamese restaurant from Trang Nguyen arrived on the scene in June, serving vegan egg rolls, fried chicken wings and cauliflower "wings," bĂșn bĂČ Huáșż, cÆĄm táș„m, and lemongrass chicken bowls, in addition to cocktails like the "Fresh Off the Boat" (lime juice, kumquat, simple syrup, mint, coconut soda, and rum) and "White Man Tears" (rum, strawberries, simple syrup, coconut cream, lime, and young coconut shell).

Grits N' Gravy Add to a List
The popular Cajun/Creole cart Mumbo Gumbo Add to a List , which recently reopened at the Carts on Foster pod, opened its new brunch spot Grits N' Gravy in the former Little Bird Bistro Add to a List space earlier this month. The menu includes chicken-fried dishes (steak, pork chops, and chicken breast), pancakes, waffles, French toast, eggs, bacon, grits, sausage gravy, and other Southern-influenced breakfast dishes.

Guilder Cafe Add to a List
The popular Princess Bride-themed coffee shop Guilder Add to a List debuted this cafe inside Powell's City of Books Add to a List on Burnside in late November, paying tribute to its source material with menu items like the "Farm Boy Oats," the "Autumn Miracle Pill" latte, and the "Spicy Humperdinck" and serving items from other local favorites, such as corn fritters from Oma's Hideaway Add to a List . The space features fanciful fairytale-inspired wallpaper by local artist Kate Blairstone.

In June, this internationally-inspired tapas destination in the former space of Irving Street Kitchen, serving up bites like steak chimichurri, ahi tuna, calamari, and tiramisu.

Jerry's Pizza Add to a List  
Jerry Benedetto, who built a following selling waitlist-worthy tavern-style pies out of his home kitchen under the name Jerry's Pizza on Instagram last year, opened his highly anticipated pizzeria inside the Bear Paw Inn Add to a List  in May. Pizza options include cheese, pepperoni, sausage, or the "Jerry's special," which is topped with sausage, pepperoni, and canned mushrooms. You can also customize your own pizza with toppings like olives and hot giardiniera.

Lawless Barbecue Add to a List  
This takeout- and delivery-only kitchen slinging slow hardwood-smoked, Kansas City-style barbecue opened early in the year, with a menu of hearty comfort food like Frito chili pie, smoked and fried wings, burgers, brisket banh mi sandwiches, panko mac and cheese, carnitas tacos, ribs, and banana pudding. The spot also opened a location inside the award-winning farmhouse-style brewery Little Beast Brewing Add to a List in October.

Meals 4 Heels Add to a List
Local chef Nikeisah Newton started a food delivery service for sex workers called Meals 4 Heels in 2019, inspired by her former dancer girlfriend's need for nourishing food after her late-night shifts. Last spring, she launched her own brick-and-mortar inside The Redd's Powerhouse Cafe space. The healthy bowl-style dishes have names inspired by her customer base, like "I Like to Cha Cha" ("green" brown rice, citrus slaw, black olives, mild salsa, cheddar, and cotija, topped with avocado, crushed Juanita's tortilla chips, salsa lizano, pickled red onions, and cilantro) and the "Verbal Tipper" (lemon pepper couscous, Italian pickled vegetables, marinated artichokes, cherry tomatoes, cucumbers, crumbled cotija cheese, crispy quinoa, and a balsamic drizzle).

Nacheaux Add to a List and Unicorn Creationz Food Hall Add to a List
In March, the popular "Mexicajun" food cart Nacheaux opened a brick-and-mortar restaurant inside the former space of Alameda Brewpub Add to a List , with craveable dishes like "Doriteaux" cheese-dusted beignets, crawfish étouffée, Cajun fried chicken crunch wraps, and carnitas mac and cheese. In October, owners Anthony and Stephanie Brown added a full-fledged food hall with two new restaurant concepts next to their flagship restaurant: Bourbon Street Add to a List , a New Orleans-inspired, speakeasy-style bar and restaurant, and Karnival Korner Add to a List , a dessert shop serving up ice cream, freshly baked cookies, and other treats.

The Midnight Add to a List
Star bartender Estanislado Orona, known for his striking original craft cocktails, opened his own bar (previously called Bar Midnight) in the former Liquor Store Add to a List space in June. In addition to drinks like the "Horxata" (house-made horchata with Plantation 3 Stars rum, Mexican Coke, and cinnamon) and the "Death Shroud" (Libélula Tequila, Accompani Marigold, Bianco Vermouth, and absinthe), the bar also features a food menu with vegan and vegetarian tapas.

Mitate Add to a List
The popular vegan, gluten-free sushi pop-up Mitate opened a cart at the CORE (Collective Oregon Eateries) food cart pod Add to a List in June. EverOut associate editor and Portland Mercury food and drink columnist Janey Wong writes, "This sushi is so flavorful and fully-fleshed on its own that I feel like soy sauce would almost taint it. It’s also virtually indiscernible to the eyes and taste buds as vegan."

The Moon Room Add to a List
Well-known beer industry veteran John Harris's celestial-inspired brewpub Ecliptic Brewing Add to a List expanded with its first satellite location, the Moon Room, in the former space of Base Camp Brewing Add to a List in November. The outpost features over 30 taps as well as a food cart serving hot sandwiches, soups, and salads, with vegan options available.

Nico's Ice Cream Add to a List  
After the success of his wildly popular ice cream cart Nico's Ice Cream Add to a List , owner Nico Vergara debuted his new brick-and-mortar shop in the former Cupboard Goods space in November. (Janey Wong wrote about the upcoming shop in September.) Vergara specializes in New Zealand-style "real fruit" ice cream, featuring a vanilla base swirled with fresh fruit, with flavors like marionberry, strawberry, raspberry, and blueberry. Guests can choose from the four flavors in a kid's cone, cup, or waffle cone and can add optional toppings like rainbow sprinkles, toasted coconut flakes, graham cracker dust, and Chamoy. The space also houses Nico's Coffee, a coffee shop serving cold brew and drip coffee from a rotating selection of BIPOC-owned roasters and pastries from HeyDay.

Papi Sal's Add to a List
This food cart serving a unique combination of Puerto Rican barbecue and Philadelphia comfort food made with local, organic, and seasonal ingredients opened in the CORE Add to a List food cart pod this spring. The cart serves a variety of sandwiches on house-baked bread, such as "The Jawn" (slow-roasted Puerto Rican lechon with oregano jus, Puerto Rican barbecue sauce, sofrito mayo, and chicharrones on an Italian sesame seed roll), which is named for an all-purpose Philly slang word meaning pretty much anything, as well as the "Mr. Burns" (a fried egg, sour cream and onion dip or sofrito mayo, and hot roasted peppers on a sesame seed baguette) and a "veggie jawn" (semolina onion rings, portobello mushrooms, vegan Cheez Whiz, sofrito mayo, and sautéed onions on a sesame seed baguette).

Piccone's Corner Add to a List
In February, farmer Austin Piccone opened this butcher shop and osteria. The restaurant features a menu inspired by Italian-American and Pacific Northwest flavors, highlighting pasture-raised heritage pork from Piccone's Sandy, Oregon-based farm Wallow & Root.

Pizza Thief Add to a List  and Bandit Bar Add to a List
Darby Aldaco (a former executive chef at Nancy Silverton's acclaimed Triple Beam Pizza) and Tony Pasquale opened Pizza Thief, a pizzeria serving naturally leavened pies, in the former space of Acapulco's Gold Add to a List in June, along with the adjoining cocktail lounge Bandit Bar. Toppings run the gamut from local produce to house-made sausage. The bar serves cocktails made with house-made tonics and syrups, as well as local and Italian wine, cider, and local beers on tap.

Kimberly Dam, owner of the Vietnamese coffee roasting company Portland CĂ  PhĂȘ, opened the doors of this cafe in April. The Portland Mercury's Jenni Moore has more details.

PULU by Sunrice Add to a List
The farmers market vendor and pop-up Sunrice launched a weekly residency inside Deadshot Add to a List this fall. The menu incorporates Filipino, Vietnamese, and Japanese influences, with dishes like mushroom sisig, barbecue pork skewers, and "not mango peach pie" (a deconstructed homage to the classic dessert from the beloved Filipino fast-food chain Jollibee—this version is made with grilled peach granita, mango, and fried cinnamon-sugar rice chips).

Smart Donkey Add to a List
You can now drink a pint and eat burritos inside a converted car wash stall. Former Autentica Add to a List and Uno Mas Add to a List chef Oswaldo Bibiano opened this new Mexican beer garden inside the former Auto Oasis space last week.

Sunshine Noodles Add to a List
Chef Diane Lam opened a brick-and-mortar version of her hit pop-up Sunshine Noodles in the former Slabtown XLB Add to a List space earlier this month. The Cambodian noodle bar recreates the ambiance of a city alleyway with neon accents and features menu items like Phnom Penh noodles, lort cha (a Cambodian rice noodle dish), lime pepper wings, catfish spring rolls, and sundaes, such as the "Ground Chocula" (black sesame ice cream, chocolate ganache, mochi, shaved halva, and whipped cream).

Vegan Junk Food Add to a List
Previously a takeout-only operation, this plant-based comfort food spot opened a dining room this fall. Janey Wong writes, "The chicky nuggies were very convincing, lookin’ darn near identical to their animal counterpart, and satisfying to this omnivore’s palate. The curly fries that accompanied it were pitch perfect, but the real revelation was the vegan ranch."

Wild North Add to a List
The cart Wild North, which sourced all of its ingredients from a 100-mile radius and was forced to close early last year due to the pandemic, opened a brick-and-mortar in a converted house on NE Broadway this fall. The menu features freshly baked bread, "fancy toasts" with butternut squash and smoked duck foie gras, smoked trout chowder, roasted vegetables, and pan-seared trout. Pro tip: You can even get your bread cut into a bread bowl for your soup, Ă  la Panera (but way better).

Wild Thing Add to a List
Arden Add to a List owner Kelsey Glasser and Sweedeedee Add to a List chef Sam Smith opened this plant-based grain bowl shop on NE Alberta Street last month. You can customize your bowl with your choice of a base (Koda Farms brown rice, tri-color quinoa, greens, or a mix), three to five toppings (such as roasted delicata squash, lemony Brussels sprouts, cumin carrots, urfa biber sweet potato, turmeric pickled vegetables, or smoked paprika cauliflower), a sauce (hazelnut red pepper romesco, green tahini miso, or coconut garlic yogurt), and a "crunch" (a furikake-za'atar spice blend, crispy garlic, or puffed rice), with optional add-ons like tempeh "chicken" salad, Ota Tofu, and avocado. The shop also offers its own line of canned wines, including Dry White Wine (a dry white Riesling) and the Pinot-Lite (a light, juicy red blend of Pinot Noir and Pinot Gris), in addition to a hazelnut-butter cold brew made in collaboration with Never Coffee.

YāYā Add to a List
Chef Steven Chin, restaurateur Micah Camden, and NFL pro Ndamukong Suh opened this Cantonese barbecue spot for takeout in June. The menu includes roast duck, soy sauce chicken, crispy pork belly, and char siu, as well as fried rice and side dishes like ginger scallion noodles and pork and shrimp wontons in chili sauce.

UPCOMING OPENINGS FOR 2022

Afuri Ramen + Dumpling Add to a List
This much-buzzed-about Tokyo ramen chain with locations in Beaverton Add to a List , Buckman Add to a List , and Old Town-Chinatown Add to a List plans to open a location in Slabtown in early spring 2022. The new location will serve the chain's specialty, a bright, delicate yuzu shio ramen, in addition to hazelnut vegan and pork-style tantanmen, tsukemen, small plates, gohan, winged gyoza, and more, and will offer customers a clear view of the ramen-making process.

Banh Mi Boys Add to a List
This Louisiana-based Viet-Cajun restaurant, which specializes in banh mi/po' boy hybrid sandwiches, plans to open a Portland franchise soon. The chain was originally set to open in Doe Donuts Add to a List ' former space, but according to a recent Instagram announcement from founder Peter Nguyen, the location fell through and the business is now scouting another location.

Bing Mi Dumpling and Noodle Bar Add to a List
The popular jianbing cart Bing Mi Add to a List will start 2022 off strong with a new nearby Northern Chinese dumpling and noodle bar opening in January.

Bluto's Add to a List
Rick Gencarelli, the chef behind Lardo and Grassa, is set to open a playful Greek-inspired restaurant called Bluto's (named for the rowdy Animal House character played by Jim Belushi). The menu will center around souvlaki and might also include dishes such as deep-fried eggplant steaks, ouzo mojitos, and Greek yogurt soft serve with a tahini hard shell.

Canby Beer Library Add to a List
Oregon City Brewing Add to a List , which recently came in seventh place in the U.S. Open Beer Championship's top 10 breweries in the country and took home five medals, plans to launch a second location called the Canby Beer Library in the former Canby Public Library space, with an opening tentatively set for summer 2022. The space will house a taproom with over 40 beers, a cidery, a barrel-aging program, four micro-kitchens, a rooftop patio, and other tenants, including a salon and two boutiques. The brewery also opened a new beer garden and food cart pod in late November, with a covered outdoor dining area and carts from E-San Thai, Alani Mediterranean, The Meddling Lime, Jackpot Foods, Ko Sisters Seoul Food, Pete’s Meats Barbecue, Nacho Time, and Olympia Provisions.

Chaat Wallah Add to a List
Desi PDX owner Deepak Saxena opened a new Indian sandwich and snack spinoff called Chaat Wallah (which loosely translates to "snack vendor") inside 503 Distilling earlier this fall, with items like masala pulled pork sandwiches, paneer and chutney nachos, and spiced lamb sloppy joes. It's currently temporarily closed but will reopen in mid-January, and also has plans in the works for a cart at the Upright Brewing food cart pod in Northeast Portland in 2022.

Dough Zone Add to a List
File under "news we're excited about": At long last, Washington's rapidly expanding dumpling destination Dough Zone has announced that it plans to open its largest location to date in Portland in spring 2022. The restaurant, which is known for its juicy xiao long bao (soup dumplings) and sheng jian bao (pan-fried steamed buns), will take over the former River Space event venue.

Hapa Pizza Add to a List
The Beaverton Farmers Market Add to a List stall Hapa Pizza, known for its Neapolitan pizza topped with ingredients like pho-braised brisket or Vietnamese barbecue pork, will open a food truck in spring 2022. In addition to pizza, the truck may also serve dishes like papaya salads and poké.

HeyDay Add to a List
Soon, you'll be able to acquire the pop-up HeyDay's coveted rice flour doughnuts on a more regular basis: The business plans to open a permanent stall in the CORE Add to a List ood cart pod and food hall this winter.

Jacob & Sons Add to a List  
Chef Noah Jacob is currently running this Jewish supper club and hopes to open a deli somewhere in Northwest Portland sometime in the next couple of months. The new spot will serve house-cured fish, rye bread, challah, bialys, rugelach, babka, black-and-white cookies, and more.

Jojo Add to a List
The meme-loving fried chicken cart is getting its own brick-and-mortar restaurant in the former space of Daily Cafe Add to a List . Owner Justin Hintze will bring his popular menu of over-the-top comfort food like double-fried jojos and smothered fried chicken sandwiches to the restaurant, along with some new specials like a goat cheese patty melt with fig jam and pepper relish. Eem Add to a List bartender Ashelee Wells is developing a "smashable" drink menu, and Hintze is also bringing a pastry chef aboard.

Top Chef star Gregory Gourdet's highly anticipated restaurant Kann is currently slated to open in May or June 2022.

Langbaan Add to a List and Phuket Cafe Add to a List
The acclaimed Thai restaurant Langbaan is moving to a new location in Northwest Portland. Once it does, it will also open a new restaurant called Phuket Cafe inside a mock Thai train car in front of the former Ataula space, serving Southern Thai food and classic cocktails. In the meantime, Langbaan is serving a set-course tasting menu at the patio at its current location.

Matt's BBQ Add to a List
Matt Vicedomini's ever-popular Texas-style barbecue cart plans to open a second location at Breakside Brewery's Beaverton beer garden. The famed artisan ice cream chain plans to open two new scoop shops in Oregon: one in Eugene Add to a List next spring and another in Beaverton Add to a List next summer. CEO and co-founder Kim Malek said in a press release, "It's always been a dream to open a shop in Eugene and we're so excited to see this location come to fruition. We've spent years collaborating with the University of Oregon and other local businesses, like Singing Dog Vanilla and Red Ape Cinnamon. It's unbelievable to get to open such a special shop in our backyard, and we cannot wait to meet everyone!"

Sissy Bar Add to a List
Derek Palmer of Raven & Rose Add to a List and Truman Cox of The Benson Add to a List hope to open this LGBTQ+ "video bar" in February 2022. The bar will serve classic cocktails alongside a Colombian food menu and will feature TVs playing video vignettes from famous films around the space.

Sugarpine Roadhouse Add to a List
Last spring Emily Cafazzo and Ryan Domingo, co-owners of the retro Sugarpine Drive-In Add to a List , purchased the historic space formerly home to the beloved Shirley's Tippy Canoe, which was damaged by fire in January 2020. In homage to the restaurant's past life as a 1930s roadhouse, they plan to restore it and reopen it as an old-fashioned roadside pit-stop in summer 2022.
