A cheesesteak with neither cheese nor steak may sound like a ship of Theseus-type paradox, but it's a reality at Buddy's Steaks. After running some pop-ups for their plant-based Philly cheesesteak concept earlier this year, Eem general manager Angela âAngâ DâOcchio and Buddy Richter (who's worked at Vtopia and The Mocking Bird) opened this cart in the Rose City Food Park at the end of May. Their take on the regional carnivore-staple sandwich is made with textured vegetable protein and vital wheat gluten, with pockets of coconut oil fat and a cashew- and coconut oil-based cheese. Besides cheesesteaks, the cart also offers fries, kale salad, plant-based cheesesteak egg rolls and mozzarella sticks, and a Beyond Meat sausage and pepper sandwich.
