After five years of cooking in local hot spots such as Rock Creek, Bastille, Stoneburner, and Toulouse Petit, Juan Garcia was determined to become his own boss. He set out to open his tamale truck, celebrating the meals that he grew up eating as a young boy in Mexico and then in Quincy, WA. Today, Juan serves the traditional options of chicken and pork tamales, but also likes to mix it up with unexpected flavors such as pork belly, charred cauliflower and roasted peppers.
